Drywors is a traditional South African dried sausage — made from thin beef sausages that are gently air-dried until firm, flavourful, and incredibly moreish.
Unlike biltong, which is sliced from whole muscle, drywors starts as a spiced beef sausage. As it dries, the natural fats and spices concentrate, giving it a deep, savoury flavour and a satisfying snap when you bite into it.
